This tuna spread is modified from a great recipe I found on line, altered a bit to suit my taste and from friend's suggestions.
- 1 envelope (2.6 oz) Starkist Chunk Light Tuna in water
- 1 tablespoon light mayonnaise
- 2 tablespoons non fat cottage cheese
- 1 teaspoon dijon mustard
- 1 teaspoon freshly squeezed lemon juice
- zest of 1 lemon
- 2 scallions (green onions), chopped
- 1 tbsp chopped walnuts
- 1 tbsp chopped apple
- salt & pepper to taste
mix all ingredients, spread on toasted bread. Best on whole wheat bread.
