Blender Mayonnaise

Low-fat mayonnaise - I started making this when I was diagnosed with high cholesterol.

 

Ingredients

  • 1/4 cup egg substitute
  • 1/2 tsp salt
  • 1/2 tsp dry mustard
  • 1/4 tsp paprika
  • 1 tbsp white vinegar
  • 1 tbsp lemon juice
  • 1 cup salad oil - divided

Directions

Put all ingredients except 1/4 cup oil in blender and process at whip/mix. Remove feeder cap & pour in rest of oil in steady stream. Stop blender & use spatula if necessary to scrape side of blender.
