My go-to Christmas snack! I make tons of this stuff and give for gifts what I don't eat myself!
- 2 cups sugar
- 1 cup light corn syrup
- 1/2 cup water
- 1 stick butter
- 2 cups pecan halves (or raw peanuts)
- 2 tsp baking soda
- 2 tsp vanilla extract
Break half of pecan halves into smaller pieces and set aside. Combine sugar, corn syrup and water in large pan and heat to soft ball (230°). Grease cookie sheet with 1 stick of butter and add rest of stick and nuts. Cook to 300°, stirring constantly. Remove from heat and add 2 tsp. baking soda and 2 tsp. vanilla. Stir just until fluffy. Pour at once on greased cookie sheet (use 2 forks to spread out, if necessary) and allow candy to cool. Break into small pieces.
Make on a clear day - seriously!
